Whole 30: Day 8 Breakfast (egg-free!)

Just a quick egg-free breakfast suggestion for you Whole 30-ers! A banana, apple, spinach and coconut smoothie bowl for the perfect morning energy boost. I actually wanted to make this as nana-ice-cream but I needed to use up my non-frozen bananas so I had to settle for just a smoothie – equally as nice but ice cream form always seems more filling! To really bulk it out, I loaded mine with *deep breath* cashews, pumpkin seeds, flax seed, goji berries, banana slices, blackberries, blueberries, and a sprinkling of more shredded coconut – making it a filling and substantial breakfast! Whenever you’re having a smoothie fore breakfast be sure to load it with nutrient dense toppings and eat it with a spoon (!!!), so your brain gets the message that this is food to fill you up and not just a drink!

P.S You really cannot taste the spinach so feel free to add even more. Remember that you should be having a considerable amount of vegetables (preferably greenery) with every meal, so knock yourself out: add kale, avocado, carrot, etc…

Ingredients (serves 1)

2 bananas (frozen if you want nana ice cream)

2 large handfuls of spinach

1 large apple (peeled, cored, and chopped)

1/4 cup almond milk

1/4 cup shredded coconut

Method (for those of you who own a crappy blender like mine)

  1. First blend together the spinach and milk to create a green liquid.
  2. Add the apple and coconut and blend until smooth.
  3. Add the banana last to avoid any clogging. Blend until thick and creamy.
  4. Serve with your desired toppings!

Another quick note: I will be posting some dinners at some point as well, I’m not all about the breakfasts don’t worry!
